Yang Chow Fried Rice...My Style



I like my Yang Chow Fried Rice with dimsum but you can always eat it on its own because it is already a complete meal itself. Yang Chow Fried Rice ingredients varies but the staple items are rice, spring onions, peas, carrot, eggs, meat or shrimp. It is basically stir frying vegetable and meat with  a day old rice. Then add the scrambled egg in the end. A day old rice is use so it is not sticky. My mother used to add menudo leftover and and it taste good too. So if you have any leftover meat like rotisserie chicken, chinese sausage, ham go ahead and try it I bet it will work. 

Ingredients:

4 cups rice (preferably left over or day old rice)
1/2 cup cooked/leftover meat
2 Chinese sausage sliced diagonally
1 medium diced carrot
1/3 cup green peas
4 cloves minced garlic
1 small minced onion or 3 stalks spring onion
2 tbsp vegetable oil
2 scrambled eggs
1 tbsp soy sauce
salt to taste

Procedure:
1. Put oil in the pan and stir fry diced carrot, green peas  for 3 minutes. Set aside.
2. On the same pan, with the remaining oil, saute garlic till golden brown. Add and stir fry the onion, meat and chinese sausage till it is cook and tender.
3. Add the rice and soy sauce and mix thoroughly.
4. Then, add the scrambled egg and mix them well.
5.  Then, add the green peas and carrot. Add salt to taste.
6. Transfer to a plate. Serve hot and enjoy!
