Binatog Recipe

What is that one snack we have after having our afternoon nap? It taste even better when it's raining or just after the rain, or maybe it's just for me. It's made of white corn, topped with grated coconut with a little hint of salt. Yes, Binatog! Remember those time you have to run out if your house to call the Binatog vendor with the Binatog pail safely kept at the back of their bikes. For the past few times I went for my vacation in the Phillipines, I have only seen it once in the neighborhood. Too bad for the kids nowadays, I think it's their loss not knowing or trying one!
Can you believe you can make it with just 3 main ingredients. So off I went to the grocery store to get me some Hominy corn. Hominy can be white or yellow made from kernels of corn which is soaked in an alkali solution of either lime or lye. For this recipe, I'll stick with the canned Hominy to save myself time and effort. And it's not that hard to find. So, go ahead and try this easy recipe of Binatog...my style(",)

Ingredients:
White Hominy
Grated Coconut
Salt or Butter to taste

In a pot, pour the can of Hominy including the liquid.
Add 1/4 cup water, and let it simmer for 7-10 minutes.

Arrange in a cup or plate, topped it with grated coconut
and salt to taste. Enjoy!!!
